Huitlacoche quesadillas. The fungus under examination being sauteed with onions, tomatillo and poblano pepper, but not so much of these that the flavor of the thing was drowned. Have never eaten food that more perfectly resembled dirt.
Reviewer 1 quite liked its mild flavor and texture; it had more bite than he was expecting.
Reviewer 2, of superior instincts, thought it wasn’t worth the denomination of delicacy and was far more excited about the homemade tortillas.
